I know we already have the egg for Easter, the snowball & lump of coal for Christmas, but here's some of my own ideas of pets:
New Year:
New Leaf - life, Gives 1 Nature's Wrath at baby, Woodwalker at adult & Forest Lord at epic.
Halloween:
Night Knight - death, Gives 1 Skeletal Pirate at baby, Lord of Night at adult & Deer Knight at epic.
Draining Spectre - death, Gives 1 Ghoul at baby, Sacrifice at teen, Vampire at adult, Wraith at ancient, Scarecrow at epic & Dr Vonn's Monster at mega.
Burning Ghost - fire, Gives 1 Link at baby, Power Link at adult & Efreet at epic.
Christmas:
Sundeer - fire, Gives 1 Yellow Fire Elf at baby, Fire Elf at adult & Strong at epic.
Christmas Gobbler - myth, Gives 1 Blood Bat at baby, Errant Gobbler at adult & Humongofrog at epic.
Frosty - ice, Gives 1 Evil Snowman at baby, Frostbite at adult & Lord of Winter at epic.

These seeds aren't holiday themed, but here they are:
Red Hot Chilli Peppers - Fire themed, give chilli & fire snacks, fire TCs, a few musical housing items and reseed at elder. Look like 4 red peppers, playing guitar/drums and 1 singing.
Nightshade - Death themed, give fruit/vegetable & death snacks, death TCs, plant reagents (braided and vine at elder) and chance to reseed at elder, not definite. Looks like a pure black palm tree, with a skull under it's shade.
Poison Ivy - Death/Life themed, give death snacks, life & death TCs, plant housing items and reseed at elder, may also give an Ivy League seed at elder. Looks like an Ivy League, but no books, and constantly blowing it's nose and coughing.

I think that there should be an Easter Hoard Pack, and this is the armour:
St Patrick's Day - a pot-of-gold pet, Life school, gives a Fairy card at Baby, Centaur at Teen, Centaur at Ancient and Forest Lord at Epic.
For those who are saying this pet might be overpowered, keep 2 things in mind:
1) This is just an idea and I'm not glued to it, just a thought off the top of my head. 2) If you had your own pot of gold you'd be rich, right? Well, with the extra spells, your character is now "rich" for combat by getting both healing and attacking spells
I really like these ideas but normally when a pet gives spells and you train it, it normally gives out multiple cards of the same spell example: The polar fox gives one blade storm at baby, and two at ancient, where as you have different spells. Also what are the stats for the outfits and wands for each level like 1-4, 5-9, 10-14, 15-19, 20-24, 25-29, 30-34, 35-39, etc. Also nightshade is already a reagent, plus did you mean braided vine like the reagent otherwise I don't understand what you meant there. Those are just a few tips.

There are only about 10 pets that still give the same card multiple times, but search Therizeinosaurus or Harpy or Penumbra Drake, you'll see where I'm coming from. I haven't decided the stats for the things, but when I said the name of the school it would focus on, you get an idea of what the stats might be like. I know nightshade is a reagent, but I realised it could be a punny plant as well. And yes, I did mean braided vine as in the reagent.

I like the idea, but maybe give Fairy, Satyr & Rebirth instead, because that gives an OP mix of health & damage.
