Gardening: plant locks

I think it would be good to have a gardening spell to lock my plants so they can't get harvested. I do not like or use the Second Spring spell, because it costs too much energy, sets up another plant with needs and pests to worry about, and isn't available to younger wizards. All I want is to freeze a few elder plants so they don't go anywhere. I like it a lot that we have this option for backpack items, but it would be great to have it for garden plants too.

Many of us have gardens where we keep a "liked" plant around to help a main crop grow faster (like Boom Shrooms for Evil Magma Peas, or King Parsley for Couch Potatoes). Eventually those liked plants level up to elder, and in haste to get our gardening work done, many of us have harvested them by mistake. That's bad since we have to find another seed, replant it, and care for it all over again, which is annoying especially for rare plants that don't re-seed themselves at elder level, like Moon Flowers.

I have had a garden filled with about 20 things at once, but I have never harvested one by accident.

Twenty is not that big. Many wizards have gardens of over 60 plants each. To harvest them, you basically have to press X over and over until it is all done. Now, you could press X the exact number of times on each plant, slow and deliberately, but that takes a lot of time that many gardeners just do not have.
