I have recently been trying finish all my side quests, a very old crafting quest came up, i crafted both the athames (Stinger Of The Scorpion) and both rings (Costellation Jewel) and was going to complete the quest but, she still has the grey question mark over her head, and it wont let me complete the quest?!?

This is a common mistake, and not a bug, young Wizard.
She asked you to craft them, but she also asked that you bring those items to her as proof that you completed your task. Unless you have the required items in your backpack when you speak to her (not your bank, not equipped), she cannot credit you for work that you cannot show.
