On several occasions, just as a fish started to 'nibble' my wizard suddenly reappeared within line of sight making it impossible to see if lure went below water.

It shouldn't happen at all, fishing is new so there might be a few glitches still, don't expect it to be perfect right away. Later, it may not happen. KI is still working on fishing.
I have been having the same thing happen. Posted about it in the bugs section. You don't turn away like when someone learns a spell near by. Your just standing there blocking the view.
