Instead of Try All Opponents what do you think of Try All Opponents Near Your Level? Maybe the range is like 5 levels above or 5 levels below. Perhaps they can choose the level range. Some pros would be that it would be more fair in a way that the teams have the same amount of health and level of ranked cards. Plus, nobody if forcing them to choose this option, so nobody is to blame if the pvp rating or gear is uneven. I can't really think of any severe cons, since it is just an option that players can choose if they want to.
