Why don't we just let Malistaire revive his wife? The chaos he's creating in the process is terrible but if we just helped him most of it could've been avoided it. Is it something like, "Don't revive people because it will upset the universe" or something? Or is it the dragon titan that he summons which we can't allow? Or something else?

It's the Titan - to revive Sylvia, Malistaire will wake the Dragon Titan. If that happens, the Titan will destroy everything. So Mal needs to let her go.
