There's a 50-50 chance of getting either parent back, but sometimes we get a run of bad luck. One option you have is to just keep trying to hatch this pairing until you get a Deer Knight back.
Another option is to hatch with another Deer Knight. I've got a pure one and several mixed up ones if you want to meet up in the game.
