Maybe I am missing something with the Hatching Kiosk but I have adult pets and they are not showing in the list to offer to the kiosk. Am I missing something here?

The Kiosk will show the pet you have equipped. Make sure you have it equipped.
Also some pets, esp most Crowns pets, are blocked from being in the kiosk. In your backpack, if you look on your list of pets, you can hover the mouse for the pet's info. If there is an icon (purple egg in a nest w a red circle with a red diagonal line through it), that pet is unable to be put in the kiosk.
They can still be hatched using the sigils inside the hatchery. Hope that helps.
