As of the patch a couple of days ago I keep finding myself in the heavily populated realms where previously it would remember what realm I had selected, checking if this is a bug or feature as its frustrating.

There was a change to make this happen, Please see the section titled "Realm Locking" in the Update Notes:

https://www.wizard101.com/game/updates

"There is a new option to lock your realm. This is important to note because we’ve made a change so you are more likely to be shifted to a more populated realm. If you’d like to not be shifted, lock your realm within the options menu."

I did lock the realm by checking yes in remember realm as shown in the news update HOWEVER when I signed back it, it put me in a crowded realm- different than the one I selected. Not liking this change! Very annoying to keep resetting the realm.

However it still changes your realm when you exit a team up. I wish the lock worked for that too (and derby, and pvp).
